One-Ingredient Peanut Butter
(Sugar & Oil-Free)

You’d never believe just how easy it is to make peanut butter right at home. You just need one ingredient…peanuts!!! This peanut butter is luscious and satisfying, packed with a punch of real peanut flavour, and is free of sugar and oil. Enjoy slathered on toast, in smoothies, oatmeal, or by the spoonfuls that just make your ear lift up with inexplicable pleasure.

Why you should make your own peanut butter (at least once):

  • It’s interactive to see the simple yet wonderful process of making peanut butter
  • You control the ingredients – homemade peanut butter tastes so much more peanut-y and rich without the added oils and sugar.
  • It is much cheaper and flavourful than store-bought 

What you’ll need…

Ingredient:

  • Peanuts: you may use raw peanuts with or without skin (skin adds more flavour), or even pre-roasted straight from the can!

Equipment:

  • a food processor/ a high-speed blender
  • spatula
  • baking sheet
  • jar/ air-tight container to store the peanut butter

If dry roasting on the stove, instead of a baking sheet,  you’ll need a frypan/ skillet.

Methods of Preparation

  • You can roast the raw peanuts either in the oven or on the stove.
  • If you’re using pre-roasted peanuts straight from the can, just toss ’em in the blender and blend, blend, blend…

How to make peanut butter

Roast: In an oven pre-heated at 350 degrees Fahrenheit (180 degrees Celsius), roast the raw peanuts for 15-20 minutes.

Blend: In a blender/ food processor, blend for 5 minutes or until smooth, while stopping in between to scrape down the sides with a spatula. A chunky mass will form before becoming smooth – keep going. Give your food processor or blender a few breaks between blending, if needed.  

Alternatively…

You can roast these peanuts on the stove: In a frypan or skillet, dry-roast the peanuts on medium-high heat for 7-10 minutes, or until browned and fragrant. Keep the peanuts moving with a spoon to avoid burning. Then, continue with the recipe.

Add-ins

You can add some pizazz to your peanut butter with some add-ins: Here are some ideas:

  • salt
  • sweetener – maple/ date/ agave syrup
  • pumpkin spice
  • cinnamon 
  • vanilla extract
  • coconut oil

Ingredients
  

  • raw peanuts*

Add-ins

  • salt to taste
  • maple/ date/ agave syrup or sweetener of choice
  • pumpkin spice
  • cinnamon
  • vanilla extract
  • coconut oil

Instructions
 

Oven-roast the peanuts

  • Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Spread the raw peanuts evenly across a baking sheet and roast in the oven for 15 – 20 minutes, or until they are browned to your liking.

Blend

  • Add the peanuts to a food processor or blender, along with any optional add-ins. Blend for 5 minutes or until smooth, while stopping in between to scrape down the sides with a spatula. A chunky mass will form before becoming smooth – keep going. Give your food processor or blender a few breaks between blending, if needed.  
  •  Your homemade peanut butter is ready to be used! Transfer to an air-tight storage container. Keep it in the pantry like you would with store-bought peanut butter.

Notes

  1. *If you have pre-roasted peanuts in a can, you can skip to blending – just toss ’em in the blender/ processor and blend, blend, blend…
  2. If you have peanuts with skin, you don’t have to remove them. They add so much flavour!
  3. You can roast these peanuts on the stove: In a frypan or skillet, dry-roast the peanuts on medium-high heat for 7-10 minutes, or until browned and fragrant. Keep the peanuts moving with a spoon to avoid burning. Then, continue with the recipe.
  4. The peanuts take a much shorter time to blend while they are warm, but they will still blend wonderfully if they are cooled – just with a little more time. 
  5. Because this peanut butter has no emulsifier, the oils tend to separate from the solids after some time. Whenever this happens, use a butter knife or a spoon to stir everything together before using.
