1-Ingredient Peanut Butter (Sugar & Oil-Free)

This homemade peanut butter is luscious and satisfying, packed with a punch of real peanut flavour, and is unbelievably easy to make at home. You just need one ingredient - peanuts!!! Enjoy on slathered toast, in smoothies, oatmeal, or by spoonfuls that just make your ears lift up with inexplicable pleasure.

Ingredients
  

  • raw peanuts*

Add-ins

  • salt to taste
  • maple/ date/ agave syrup or sweetener of choice
  • pumpkin spice
  • cinnamon
  • vanilla extract
  • coconut oil

Instructions
 

Oven-roast the peanuts

  • Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Spread the raw peanuts evenly across a baking sheet and roast in the oven for 15 - 20 minutes, or until they are browned to your liking.

Blend

  • Add the peanuts to a food processor or blender, along with any optional add-ins. Blend for 5 minutes or until smooth, while stopping in between to scrape down the sides with a spatula. A chunky mass will form before becoming smooth - keep going. Give your food processor or blender a few breaks between blending, if needed.  
  •  Your homemade peanut butter is ready to be used! Transfer to an air-tight storage container. Keep it in the pantry like you would with store-bought peanut butter.

Notes

  1. *If you have pre-roasted peanuts in a can, you can skip to blending - just toss 'em in the blender/ processor and blend, blend, blend...
  2. If you have peanuts with skin, you don't have to remove them. They add so much flavour!
  3. You can roast these peanuts on the stove: In a frypan or skillet, dry-roast the peanuts on medium-high heat for 7-10 minutes, or until browned and fragrant. Keep the peanuts moving with a spoon to avoid burning. Then, continue with the recipe.
  4. The peanuts take a much shorter time to blend while they are warm, but they will still blend wonderfully if they are cooled - just with a little more time. 
  5. Because this peanut butter has no emulsifier, the oils tend to separate from the solids after some time. Whenever this happens, use a butter knife or a spoon to stir everything together before using.
